The Center for High Angular Resolution Astronomy (CHARA) is starting several new programs related to evolved stars, including AGB, red giant, supergiant and symbiotic star surveys, with a focus on imaging and mass loss determination. Binarity (if applicable) obviously plays a key role in both processes, and in our talk we present our most relevant results so far. We will focus in particular on the case of the symbiotic star EG And. We will also discuss what the future holds for CHARA and how US and European astronomers can get involved.
